Cooking For Two + The Ultimate Cous Cous Salad

If you happen to live alone, you will know that there’s never a perfect way of cooking for one. You just don’t. Cooking for one simply doesn’t exist, you know the voice inside your head will always encourage you to pour a little bit more of what you are cooking just in case..

And I guess it must be the weather that screams for shorts, loose tops and fresh food, that last week my friend and I decided to make cous cous salad for two –see emphasis in two. Or maybe the fact that we had been eating pasta non stop for two days and we were literally pasta stuffed. Which should probably make another post, can someone have too much pasta? Let me know your thoughts on this. Anyways, a glance into our fridge to see what we had and a quick run to the market to buy what was missing made this perfect summer recipe.

You will need:

250 gr of cous cous (this will ensure you eat cous cous for a long time), 1 courgette, 2 small tomatoes, some lettuce, sliced olive oils, 1 cucumber, salt, olive oil 

How to:  

Cook the cous cous as told in the instructions. Do not improvise, seriously. Meanwhile, chop the rest of the ingredients. When everything is ready, mix all together and add salt and olive oil to taste. Place the salad in a big bowl and eat.  

Of course for two never happened, it never does. We ended up cooking a massive bowl of salad that being fair was absolutely heaven, but we also have been eating salad for three days. The art of cooking for two, y’know.

    Oh you’re so right about cooking for one! It’s near impossible, even when buying ingredients! There’s too much for one person. This looks delicious & so simple to make, I need to jump on board the cous cous train, I’ve never tried it!
