I can’t remember when was the last time I posted a recipe in Carlotarules. It was probably in Belfast, but not many things have changed food wise in this time. I’m still a lazy cook but I like my food healthy and yummy, so that’s how I came up with this plate that you will probably love as much as I do..
One courgette, one pepper, one carrot, two small potatoes, salt, some olive oil, oregano
Chop the veggies and pour them in a frying pan with a little bit of olive oil. Boil the potatoes until tender in the middle and then add them to the frying pan with all the vegetables. Add salt and oregano and mix. I used oregano but you can use whatever you prefer. Open the can of lentils and strain them until all the liquid is gone. Sometimes you may want to wash the lentils as they can be a bit salty but mine were perfect (you can try them before you do anything). Add the lentils to the mix and give it a little stir. Serve and eat.
I think this has been the first time I buy and try canned lentils, and I couldn’t be happier with the result. They taste good, they have flavour and they are pretty much a gift from god because they can change your meal in the blink of an eye. This time I decided to cook them with some veggies and they were delicious. Also, let me add the fact that it took me less than 15 minutes to prepare this masterpiece, so there’re no excuses to cook healthy..
