One Pineapple, Two Recipes

So I have a confession to make: I love pineapple. I love fresh pineapple, I love pineapple juice, but what I love the most is grilled pineapple (I even love pineapple in pizza –please don´t judge me). But this last one is possibly my favourite way to eat it. If you follow me on insta, you’d have seen that some time ago I made a delicious pineapple warm salad, but what you didn’t see is that I also made another recipe which was as good as the first one. Prepare yourselves for a pineapple overload..

Warm Pineapple Salad

Ingredients: Pineapple, ½ onion, ½ red pepper, ½ green pepper, 2 crab sticks, lettuce, ½ tomato, 1 oil tbs, vinegar, pinch of salt

Start cutting and cleaning the pineapple (you can also buy an already cut pineapple). Then chop and dice it, but don’t worry about them being perfect. After this, heat a pan and grill the pineapple until it has a browny colour. Then chop the onion, the peppers, the crab sticks and the tomato and add them to the pan. Wash the lettuce, dry and cut it. I like to cut mine in small bands but this is up to you.

Choose a cute bowl and pour everything onto it. Then eat.

Vegetable Rice With A Twist

Ingredients: Basmati rice, pineapple, 1 egg plant, 1 courgette, ½ onion, fried tomato, 1 oil tbs, salt

Heat 1 tablespoon of oil in a saucepan over medium heat. Cook the rice according to the directions on the package (really don’t skip this step). Cut the egg plant, the courgette and the onion and cook until they are soft. Then add some fried tomato. In another pan, cut the pineapple and cook until it is brown.

I like to serve it separated in small piles.
